Brownies vs Blondies: What's the Difference (and Which Should You Order)?
Brownies vs blondies comes down to one thing: what the bake is built on. A brownie is built on chocolate and cocoa, so it's dark, deep and rich. A blondie is built on butter and brown sugar, with no cocoa in the base, so it's golden, buttery and has a soft, toffee-like warmth.
That's the short version. The rest matters if you're looking at our menu trying to choose, so here's what actually separates them, how we bake ours, and which to order.
What is a blondie?
A blondie is the brownie's golden sibling. Same family, same tray-baked square shape, same dense bite. But where a brownie leans on chocolate, a blondie leans on butter and brown sugar.
Brown sugar is the quiet hero here. It gives blondies their chewy texture and those light caramel, almost butterscotch notes. The result is buttery, rich and comforting, without the dark bitterness of cocoa.
Are blondies just white chocolate brownies?
Not quite. A lot of blondies, ours included, have white chocolate in them, so it's an easy mistake. But the white chocolate is an add-in, not the foundation. A blondie would still be a blondie without it, because the flavour comes from butter and brown sugar. Take the cocoa out of a brownie and swap in white chocolate, and you get something sweeter and flatter. A proper blondie is built differently from the start.
The real differences between brownies and blondies
If you want the difference between brownies and blondies in one line: one is about chocolate, the other is about butter and sugar. In a bit more detail:
- Ingredients. Brownies are made with dark chocolate and cocoa. Blondies skip the cocoa entirely and lean on butter and brown sugar, often with white chocolate.
- Flavour. Brownies are deep and chocolatey. Blondies are buttery and toffee-ish, with caramel notes.
- Texture. Both should be dense and moist, not cakey. Brownies tend towards fudgy. Blondies tend towards chewy.
- Add-ins. Both carry extras well. Brownies stand up to big flavours like nuts, spreads and biscuits. Blondies, with no cocoa competing, let whatever goes in them come through clearly.

Same family, same square, two very different bites. Some of our bakes, like the two above, also come with a jam topping, but the base is what makes each one a brownie or a blondie.
Are blondies supposed to be gooey?
A good blondie should be soft and moist in the middle, with lightly golden edges. Chewy, yes. Raw, no. If it's wet and sticky right through, it's underbaked. If it's dry and crumbly, it's been in too long.
That's how we bake our blondies: a moist, chewy centre and edges that have just turned golden. Soft enough to feel indulgent, and they hold their texture for days. Everything is handmade and baked fresh in our Manchester bakery, with real ingredients and no shortcuts. No preservatives, no artificial colours, no palm oil.

Our brownies start with real butter, free-range eggs, organic flour and Callebaut Belgian dark chocolate. That base runs through the whole range, from our classic Chocolate Brownie, the benchmark for everything else we bake, to Nutella & Pecan, Lotus Biscoff and Oreo.

Our blondies are built on real butter and brown sugar, with organic flour, free-range eggs and Callebaut Belgian white chocolate. Buttery, chewy, with those caramel notes that make a blondie a blondie. The white chocolate rounds it off without taking over.

Which should you order?
It depends what you're in the mood for.
- Order brownies if you want deep chocolate. Something rich, dark and properly indulgent.
- Order blondies if you want buttery, chewy and caramel-ish. They're lighter on the palate, with no cocoa bitterness.

Do they keep and travel the same?
Yes. Both are individually wrapped, packed into the same sturdy box and sent the same way. Both keep for up to 14 days from delivery at room temperature or in the fridge, and up to 6 months in the freezer.

Frequently asked questions
Is a blondie a brownie?
Close relatives, not the same thing. Blondies are sometimes called "blonde brownies" because they share the shape and dense texture. But they're built on butter and brown sugar rather than chocolate and cocoa, so they taste quite different.
Which is sweeter?
It depends on the recipe and the flavour. Without cocoa's bitterness, blondies can taste sweeter. Our brownies use Belgian dark chocolate for depth rather than straight sweetness. If you're not a big sweet-tooth, start with the Chocolate Brownie.
Do blondies have chocolate in them?
Many do, usually white chocolate, though it isn't what makes a blondie a blondie. Ours are made with Callebaut Belgian white chocolate. Our brownies use dark chocolate.
Can I get both in one box?
